Kathy's Southern Corn Pudding!

This is not your grandmother's corn pudding!  By that, I mean that it is not the corn pudding with a dozen eggs in it that cooks up all light and souffle like.  This is a denser and hardier corn pudding and it is also something boys seem to love.  Can you tell I have always cooked mostly for boys?  This corn pudding is also very easy to put to together. 

 

Here is what you will need:


1 can cream corn, 1 can niblets corn, 1 Jiffy cornbread mix, 8 oz sour cream, 1/2 stick butter, 1 egg, 2 Tbs. sugar, and 2 cups cheddar cheese



Melt butter, add Jiffy cornbread mix, egg, sour cream, sugar and the corn.  Drain the can of niblets corn.  Mix well until all of the ingredients are incorporated.



Spray a 2 quart casserole dish with cooking spray.  Be sure to not skip this step, because this will stick.  Pour it in the dish and bake at 350 degrees for  45 minutes.  Sprinkle the 2 cups cheese over the top and return to oven for about 10 minutes or until cheese is melted and just beginning to brown.

1 can cream style corn
1 can niblets corn
8 oz sour cream
1 Jiffy Cornbread mix
1 egg
1/2 stick butter
2 Tbs. sugar
2 cups shredded cheddar cheese

  3. I make this. I drain my nibblet corn. Do you drain yours? Just wondering how it turns out if you don't. I love this stuff! I make it for bbq's all summer, and there is never a drop left! And it is a must for Easter Sunday!

  5. This is not traditional 'corn pudding' which is why I call it 'southern corn pudding'...lol. You know we have to have cornbread and cheese in everything. :)

  6. You do drain the niblets corn. It says that in the directions of the recipe. You can actually also use a couple of cups of frozen corn.

  7. I am a celiac, so can't have the cream corn and I can substitute normal cornbread for my kind. Can I just omit the cream corn and double up with corn?

  11. You can prepare it the night before, just don't bake until you get ready to serve. Take it out of the fridge 30 minutes before baking.

  13. You can use all niblets corn instead of the creamed corn, it just changes the texture a bit but it's still good.

    3. If I omitted the cream style corn and wanted to use all frozen corn, how much would I use? Also, should I thaw the frozen corn first? Thanks so much! I think I'm going to make this over the weekend with taco soup! :o)

  14. Thank you so much for posting this . I remember having something like it as a child at my grandmothers house , but could never find a recipe that came close to the way she made it until now . This is a definite for our Thanksgiving table.

  18. Jocelyn, you might double the recipe for that many people if you think they will all eat it. We usually have so many sides they all eat a little of everything, but if they all like corn doubling it would best.

  21. I make something like tis but instead of cornbread mix I used crushed crackers. It is not quite as dense but I want mine moist and dense. Is this just as moist do you think?

  25. Kathy, Thank you for posting this. I can remember eating this growing up but never got the recipe because I always had mom and grandma to fix it for me. Now both of my favorite women are gone and I've missed this till now. I have most everything needed to make this for dinner tonight..yummy!

  27. What can I use rather than Jiffy Cornbread mix? It has lard and we don't eat pork products. Would cornbread mix work just as well?

  28. I always put frozen corn kernels in the muffin mix, and sometimes mix in shredded cheddar cheese. This recipe sounds yummier! Is it eaten like corn bread, or with a fork of spoon like a casserole? I'm guessing it comes out quite moist?

  31. My gr'mother made Corn pudding for my Dad as a little boy in the 30's & 40's, but used finely crushed soda crackers. Us 8 kids still fix it, according to Gr'ma's recipe.

  32. Thank you so much for posting this. My Aunt Elva lived in Pikeview, KY., and she would make this for our family gatherings. She would always make an extra one and give it to my Mother, for me, because she knew how much I loved it. Sidenote: I always thought she was rich, because she had toilet tissue in the outhouse, and we used catalogue pages, lol. Yes, I am old (66 yrs) and grew up in KY.

  35. When you write up a recipe on our own blog, you can pretty much call it whatever you darn well want to call it...lol. That's why it's called "Kathy's Corn Pudding"! What difference does it make what we call it, if it's good and you like it.

  36. Here in the UK we don't get cornbread mix - can you tell me what the ingredients are? I have cornmeal, both fine and coarse, and would love to try this recipe!

  38. @ Angel. I bet you can go online and order the Jiffy mix. Just Tootle Jiffy Cornbread Mix. I can't get many of my southern favorites here in the southwest, and that is how I keep my southern (USA) pantry stocked!
