I have the &qu...I, too, buy pork loin when on sale. I have the "good" end cut into thick chops, the "bad" end is left as a pork roast to use for pulled pork. A butcher once taught me that trick and a good butcher will know what you mean. I always have mine cut at the store, even at Sam's Club. Just takes a second to ring the bell and have them do it. This is why eating medium well pork is okay. Where as 30-40 years ago it made people VERY sick. And cooking to well done is more of a problem for retaining juices than flipping with a bbq fork. I know when frying/baking it's 145 degrees so I usually cook to 140 and take them off and cover- they're still cooking so it goes up to 145. <br />I fried some last night, before I saw this delicious recipe. Chops were 1/2-3/4 in. thick with bone, and it took about 4 min. per side to get the temp to 145. Along the bone they were still not done, as in REALLY not done.
